Cilantro Lime Shortbread

  1. Heat oven to 350F.
  2. Line 8-inch square baking pan with aluminum foil, extending foil over edges.
  3. Set aside.
  4. Combine all shortbread ingredients except flour in bowl; mix well.
  5. Add flour; mix until combined.
  6. Press dough evenly into prepared pan.
  7. Bake 17-19 minutes or until edges are golden brown.
  8. Cool 2 minutes in pan.
  9. Lift bars from pan, using foil ends.
  10. Cut bars into 9 equal squares; cut each square in half diagonally.
  11. Cool completely
  12. Combine 1/4 cup powdered sugar, lime juice and enough water for desired glazing consistency in bowl; mix well.
  13. Drizzle over shortbread.
  14. Immediately sprinkle with edible glitter, if desired.
