Chicken liver and bacon pasta.
- 500 grams chicken liver
- 250 grams smoked bacon
- 1/2 onion
- 1 clove garlic
- 2 bay leaves
- 1 tsp chilli flakes
- 125 ml double thick cream
- 50 grams tomato paste
- 50 ml white wine
- 5 black pepper corns
- 1 tsp salt
- 1 tbsp duck fat
- 2 tbsp olive oil
- Saute onion, garlic, chilli, bay leaves and pepper corns in olive oil and duck fat over medium heat.
- Add bacon, brown, then add white wine.
- Add tomato paste and simmer for roughly 5 minutes or till tomato paste has cooked through.
- Add chicken livers, simmer for a further 10 minutes.
- Add cream and salt to taste.
- Simmer till liver has cooked through.
- Serve with freshly cooked pasta of your choice, garnish with fresh parsley.
