The Ultimate Sweet Potato Casserole

  1. Scrub potatoes; dry, butter and wrap in aluminum foil.
  2. Bake in the oven at 350u0b0 for 1 hour.
  3. Let cool; unwrap.
  4. Peel and place potatoes in mixing bowl.
  5. Mix with softened stick of butter, orange juice, half the can of Coco Lopez, brown sugar, zest and salt and pepper.
  6. Place in a 2-quart buttered casserole dish.
