The Ultimate Sweet Potato Casserole
- 8 fresh sweet potatoes
- 1 stick real butter
- 1/4 c. orange juice
- 1 tsp. fresh orange zest
- 1 can Coco Lopez cream of coconut (used for pina coladas)
- 1/2 c. brown sugar
- salt and pepper
- 1 recipe coconut streusel topping
- 1 stick butter
- 1/2 c. flour
- 1/2 c. brown sugar
- 1/2 c. coconut
- 1/2 c. chopped pecans
- Scrub potatoes; dry, butter and wrap in aluminum foil.
- Bake in the oven at 350u0b0 for 1 hour.
- Let cool; unwrap.
- Peel and place potatoes in mixing bowl.
- Mix with softened stick of butter, orange juice, half the can of Coco Lopez, brown sugar, zest and salt and pepper.
- Place in a 2-quart buttered casserole dish.
