Triple-Fruity JELL-O Dessert Squares
- 1 can (8 oz.) pineapple tidbits
- 1-1/2 cups lite coconut milk
- 1 pkg. (6 oz.) JELL-O Cherry Flavor Gelatin
- ice cubes
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
- Drain pineapple, reserving juice.
- Meanwhile, heat coconut milk to boil in small saucepan.
- Stir boiling milk into dry gelatin mix in large bowl at least 2 min.
- until completely dissolved.
- Add enough ice to juice to measure 1-1/2 cups.
- Stir into gelatin; stir until slightly thickened.
- Remove any unmelted ice.
- Remove 1-1/2 cups of the gelatin; place in medium bowl.
- Stir in pineapple.
- Refrigerate remaining gelatin 15 min.
- or until slightly thickened.
- Stir in COOL WHIP with whisk until blended.
- Pour into 8-inch square pan.
- Refrigerate 10 min.
- or until set but not firm.
- Carefully spoon reserved gelatin over creamy layer in pan.
- Refrigerate 3 hours or until firm.
- Serve topped with remaining COOL WHIP.
