Iceberg Tomato Pickles

  1. Slice tomatoes; set aside.
  2. Add lime to water.
  3. Stir until dissolved.
  4. Strain before putting in tomatoes.
  5. Let tomatoes soak for 24 hours.
  6. Drain and soak for 4 hours in fresh cold water, changing water every hour.
  7. Mix all other ingredients and bring to a boil.
  8. Pour over drained tomatoes.
  9. Let stand overnight.
  10. Next morning, put tomatoes into jars.
  11. Boil the vinegar mixture for 1 hour.
  12. Then pour over tomatoes and seal.
  13. Makes 10 pints.
