Potato Bacon Soup

  1. Spray a 3-quart saucepan.
  2. Add onion and bacon.
  3. Stir over medium heat until onion is tender, not brown.
  4. Stir in water and potatoes; bring to boiling.
  5. Reduce heat, cover and simmer 10 to 15 minutes until potatoes are tender.
  6. Slightly mash some of the potatoes.
  7. Stir in evaporated milk, butter seasoning, salt and pepper.
  8. Cook and stir over medium heat until heated through.
  9. Do not boil.
  10. Yields 6 servings, each containing 181 calories, 2 grams fat and 391 milligrams sodium.
