Potato Bacon Soup
- vegetable cooking spray
- 1 small onion, chopped
- 1/2 (6 oz.) pkg. Canadian bacon (about 1/2 c.)
- 2 c. water
- 4 medium potatoes, cubed (approximately 1 1/4 lb.)
- 1 (12 oz.) can evaporated skim milk
- 1/2 oz. butter flavor seasoning
- 1/4 tsp. salt
- 1/8 tsp. pepper
- Spray a 3-quart saucepan.
- Add onion and bacon.
- Stir over medium heat until onion is tender, not brown.
- Stir in water and potatoes; bring to boiling.
- Reduce heat, cover and simmer 10 to 15 minutes until potatoes are tender.
- Slightly mash some of the potatoes.
- Stir in evaporated milk, butter seasoning, salt and pepper.
- Cook and stir over medium heat until heated through.
- Do not boil.
- Yields 6 servings, each containing 181 calories, 2 grams fat and 391 milligrams sodium.
