Spinach Chicken Pie
- 1 (10 oz.) pkg. frozen chopped spinach, cooked and drained
- 2 c. herb seasoned stuffing
- 1 c. quick cooking oats
- 1 c. chicken broth
- 1/4 c. melted butter
- 1 1/2 tsp. salt
- 2 c. diced cooked chicken
- 1 c. sour cream
- 1 can cream of mushroom soup
- 1/4 tsp. salt
- 1/4 tsp. Accent
- In a 1 1/2-quart glass casserole, combine stuffing mix, oats, spinach and broth.
- Toss with butter and salt.
- Press gently into 9-inch glass pie plate.
- Cook on High in microwave for 2 minutes to set crust.
- Mix chicken, sour cream, mushroom soup, 1/4 teaspoon salt and Accent and pour into center of pie shell.
- Cook in microwave on High for 10 minutes, giving pie plate a quarter turn twice.
- Let rest for 10 minutes before cutting into wedges for serving.
- Makes 6 servings.
