Pickled Uncooked Vegetables Namasu

  1. In a serving bowl combine vegetables and ginger.
  2. Toss.
  3. In a saucepan combine soy sauce, vinegar and sugar.
  4. Bring to a boil, stirring to dissolve sugar, and cook for about a minute.
  5. Remove from heat and let cool.
  6. Pour dressing over vegetables and toss.
  7. Refrigerate for at least an hour before serving
