Pumpkin Bread
- 1 2/3 c. sifted flour
- 1/4 tsp. baking powder
- 1 tsp. soda
- 1/8 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 c. Wesson oil
- 1 1/3 c. sugar
- 1/2 tsp. vanilla
- 1 c. canned pumpkin
- 1/3 c. cream sherry wine
- 1/2 c. chopped pecans
- 2 eggs
- Sift together the first 6 items.
- Mix together the sugar, oil and vanilla.
- Add beaten eggs and mix well, then stir in pumpkin. Add dry ingredients alternately with cream sherry, mixing well, then add nuts.
- Pour into a well-greased and floured 9 x 5 x 2-inch loaf pan.
- Bake in preheated 300u0b0 oven for 1 hour or when toothpick in center comes out clean.
- Turn out on wire rack to cool.
- Wrap in foil and refrigerate until ready to slice.
