Tangy Pork Chops with Caramelized Onions

  1. In a large skillet, add onion slices and sprinkle with pepper.
  2. Cook onions over medium heat, stirring frequently, about 15-20 minutes, until golden and caramelized.
  3. (If skillet is large enough, push onions to the side, or else remove them until pork chops are in place.)
  4. Add boneless smoked pork chops to skillet.
  5. Heat for one minute on each side over medium heat.
  6. Place onions over chops.
  7. Mix together in a small bowl the brown sugar and vinegar, and drizzle over onions.
  8. Simmer about 10 minutes, stirring frequently, until sugar is dissolved, onions are well coated with sauce, and dish is bubbly hot.
  9. NOTE: You may use the pork chops of your choice.
  10. Cook until pork is thoroughly cooked.
  11. I use smoked chops for ease and convenience.
