Tangy Pork Chops with Caramelized Onions
- 3-4 Tablespoons Olive Oil
- 4 Large Sweet Onions (Vidalia, If Possible), Cut Into Thick Slices
- 1/2 Teaspoon Freshly Ground Pepper
- 1/4 Cup Brown Sugar
- 1/4 Cup Apple Cider Vinegar
- 4-6 Boneless Smoked Pork Chops
- In a large skillet, add onion slices and sprinkle with pepper.
- Cook onions over medium heat, stirring frequently, about 15-20 minutes, until golden and caramelized.
- (If skillet is large enough, push onions to the side, or else remove them until pork chops are in place.)
- Add boneless smoked pork chops to skillet.
- Heat for one minute on each side over medium heat.
- Place onions over chops.
- Mix together in a small bowl the brown sugar and vinegar, and drizzle over onions.
- Simmer about 10 minutes, stirring frequently, until sugar is dissolved, onions are well coated with sauce, and dish is bubbly hot.
- NOTE: You may use the pork chops of your choice.
- Cook until pork is thoroughly cooked.
- I use smoked chops for ease and convenience.
