Simmered Pacific Saury with Ginger

  1. Remove the head, tail, and guts from the pacific saury.
  2. Cut into 3 to 4 pieces.
  3. Quickly wash in salted water, and pat dry with kitchen paper.
  4. Put the ginger and the seasonings in a pressure cooker, and place the pacific saury.
  5. Add enough water until the sauce reaches 1/2 of the pacific saury's height.
  6. Cover with the lid, and bring up to pressure, then turn the heat down to low, and cook for about 20 minutes.
  7. Simmer to thicken the sauce a little before serving.
