Grilled Packet Dinners
- 4 to 6 red-skinned or white potatoes, washed and sliced with skins
- 2 onions, peeled and sliced
- 2 to 3 carrots, peeled and sliced
- 1/4 to 1/2 lb. ground beef
- 1 Tbsp. granulated beef-flavored bouillon
- 1 Tbsp. butter or margarine
- salt and pepper
- 2 to 3 ice cubes
- Spray foil with cooking spray.
- Place potatoes, onions and carrots in the middle of a 26-inch sheet of foil.
- Crumble raw ground beef over the top of vegetables and sprinkle with bouillon. Add dollops of margarine.
- Lightly salt and pepper, then add ice cubes.
- Fold foil over the mixture to make a sealed packet and crimp edges together on the sides and over the top.
- Heat grill to medium-low.
- Place packets on grill for about 1 hour.
- Packets are done when beef is cooked and potatoes are tender.
- A packet will serve 2.
- Serve with ketchup, mustard, horseradish or other condiments, if desired.
