Cashew Butter Brownie Chip Bars
- 6 tbsp unsalted butter, melted
- 1 cup packed light brown sugar
- 1/2 cup cashew butter
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 dash 1/8 teaspoon baking soda
- 1/4 tsp baking powder
- 1 dash 1/8 teaspoon salt
- 1/2 cup semi sweet chocolate chips
- Preheat oven to 350.
- Spray a 8 or 9 inch square baking pan with cooking spray.
- Line pan with aluminum foil with ends extending over sides for easy removal from pan.
- Spray foil lightly with non stick spray.
- In a bowl whisk flour,baking soda, baking powder and salt, set aside.
- In another large bowl combine melted butter and sugar beat until well combined, add cashew butter,beat until smooth, beat in egg and vanilla.
- Add flour mixture and mix in just until well combined, add chocolate chips.
- Spread batter evenly into prepared pan, smooth top.I used a small off set spatula to smooth batter in a even layer.
- Bake about 20 minutes until set and light golden brown, a toothpick will come out clean.
- Cool in pan on wire rack.
- When cool lift out using foil and cut into bars, Makes 12 to 14 bars.
