Sopaipillas

  1. Start heating salad oil or fat.
  2. Combine flour, baking powder and salt.
  3. Sift into mixing bowl.
  4. Cut in shortening with pastry blender.
  5. Add enough water to make a stiff dough.
  6. Turn dough onto lightly floured board and knead lightly until smooth.
  7. Cover with clean dish towel and let rest 10 mins.
  8. Roll dough very thin into a rectable about 15 X 12.
  9. Cut in 3 in.
  10. squares.
  11. When oil is very hot (385 to 400), drop a few squares of dough into it at a time.
  12. Turn frequently so that sopaipillas will puff up evenly.
  13. Remove with slotted spoon.
  14. Drain on paper towels.
  15. Serve hot with honey.
  16. Makes 18 to 20 sopaipillas.
