Artichoke Quiche
- 1 (9 oz.) pastry pie shell
- 2 (6 oz.) jars marinated artichoke hearts
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 4 eggs
- 1/4 c. dry bread crumbs
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. oregano
- 1/8 tsp. Tabasco sauce
- 2 c. grated sharp Cheddar cheese
- 2 Tbsp. finely chopped parsley
- Preheat oven to 350u0b0.
- Bake pie shell 7 minutes.
- Remove from oven.
- Reduce oven to 325u0b0.
- Drain artichokes, reserving the marinade.
- Saute onion and garlic in reserved marinade 5 minutes. In a large mixing bowl, beat eggs and add bread crumbs, salt, pepper, oregano and Tabasco.
- Stir in cheese, parsley, artichokes and onion mixture.
- Pour into the partially baked pie shell and bake 45 minutes.
- Allow to cool 5 minutes before cutting.
- Serves 6 to 8.
