Peach Delight
- 1 1/2 c. self-rising flour
- 2 Tbsp. sugar
- 3/4 c. margarine, softened
- 1 c. finely chopped pecans
- 2 Tbsp. sugar
- 1 Tbsp. lemon juice
- 1 can peaches
- 1 pkg. instant vanilla pudding
- 1 (8 oz.) pkg. cream cheese
- 1 c. powdered sugar
- 1 (12 oz.) frozen whipped topping
- Combine flour and 2 tablespoons sugar.
- Cut into margarine until coarse and crumbly.
- Add 1/2 cup nuts.
- Press into 13 x 9-inch baking dish.
- Bake for 15 minutes at 350u0b0.
- Cool completely. Combine peaches, sugar and lemon juice and set aside.
- Combine cream cheese and powdered sugar and beat until fluffy.
- Stir in 3 cups topping.
- Spread over crust.
- Combine instant pudding with peaches.
- Spread over cream cheese.
- Spread remaining whipped topping on next, then sprinkle with pecans.
- Refrigerate.
