Vegetable Gumbo Recipe
- 1 pkg. (16 ounce.) vegetable gumbo mix
- 1 onion, minced
- 1 clove garlic, minced
- 1 can stewed Italian tomatoes
- Salt and pepper to taste
- Dash of cayenne
- 1/4 c. water
- Saute/fry onions and garlic in 1/4 c. water.
- Add in tomatoes, vegetable mix and 1/2 tomato can of water.
- Simmer till tender.
- Serving suggestions: serve on a bed of rice, or possibly add in cooked macaroni to mix and serve with a salad and garlic toast.
