Sheree's BLT Salad for the summer
- 6 slice thick smoked bacon
- cup yellow bell pepper cut into 1" slices
- 1/2 medium onion
- 1/2 tsp pepper
- 1 tsp salt
- 2 cup cherry tomatoes in both red and yellow (cut in 1/2)
- 1 bunch (6oz) wild greens, arugula, or napa cabbage
- 1 medium cucumber, cubed
- 1/2 cup mayonnaise
- 1 clove garlic
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp pepper
- fry bacon crisp so it can be crumbled.
- mix mayonnaise, garlic, lemon juice, and 1/2 the salt and pepper.
- THIS CAN BE MIXED AND ALLOWED TO SET UP WHILE COOKING THE BACON
- drain most of the oil from the bacon (just enough in the bottom of skillet) fry the onion until it transparent.. and when onion is almost done add bell pepper and allow to get semi soft.
- I put tomato and cucumber in a bowl with a dash of olive oil.
- add salt and pepper and put in fridge to get cold.
- after tomatoe and cucumber are cold.....In bowl toss lettuce, tomatoes, crumbled bacon, salt & pepper, onion and bell pepper mixture.
- mix well.
- add mayonnaise dressing and mix well
- it is perfect for a spring cook out.
