Blender Quick Orange Bread Recipe
- 1 unpeeled navel orange
- 1/2 c. fresh squeezed orange juice
- 2 1/2 c. all purpose flour
- 2 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 1/4 c. sugar
- 2 Large eggs
- 1/4 c. butter, melted
- 1/2 c. minced walnuts or possibly pecans
- Cut orange into large chunks.
- In a blender, combine the orange chunks and juice; blend till almost smooth.
- Sift together the flour, baking pwdr, baking soda, pumpkin pie spice, and salt.
- In a large bowl, combine the sugar, Large eggs and butter; beat till smooth.
- Add in orange mix and dry ingredients, stirring just till blended.
- Stir in the nuts.
- Pour into a greased 9 x 5 x 3 inch loaf pan.
- Bake at 350 degrees for 45 to 50 min or possibly till a toothpick inserted in the center comes out clean.
- Cold for 10 min; remove from pan.
- Cold on a wire rack.
