Spicy Kielbasa Pasta
- 2 Tablespoons Olive Oil
- 3/4 cups White Onion, Diced
- 13 ounces, weight Kielbasa, Sliced Into Bite-sized Rounds
- 2 cloves Garlic, Chopped
- 2 cups Chicken Broth
- 1 can (10 Oz. Size) Rotel Diced Tomatoes And Chilies
- 1 box (16 Oz. Size) Penne Pasta
- 1/2 cups Whole Milk
- 2 cups Jack Cheddar Cheese, Shredded
- Salt And Pepper, to taste
- Heat oil in a large (12-inch) cast iron (or other oven safe) skillet with a lid over medium high heat.
- Add onion and cook for 34 minutes, then add kielbasa and let it cook for one minute.
- If using raw Kielbasa, cook until browned.
- Add garlic and cook for 30 seconds.
- Add broth, Rotel, pasta, milk, salt and pepper.
- Bring to a boil, cover and simmer under reduced heat of medium low.
- Let it simmer for 15 minutes.
- Stir at least once while cooking.
- Preheat broiler.
- Remove skillet from heat and stir in half of the cheese.
- Top with remaining cheese and put skillet under the broiler.
- Broil until cheese melts, 34 minutes.
