Spinach Manicotti
- 1 pkg. (8 oz.) manicotti
- 3/4 lb. ground beef
- 1 c. Ricotta cheese
- 1 pkg. (10 oz.) fresh spinach, squeezed
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 scallions, sliced
- 1 can (15 oz.) tomato sauce
- 2 oz. Monterey Jack cheese (1/2 c.)
- Preheat oven to 400u0b0.
- Grease 9 x 13-inch baking dish.
- Cook manicotti according to package directions.
- Cook ground beef for 5 minutes; drain.
- In large bowl combine beef, Ricotta cheese, spinach, oregano, salt, pepper and scallions.
- Fill each manicotti with 2 tablespoons meat mixture and place in baking dish.
- Pour tomato sauce over manicotti.
- Sprinkle with cheese.
- Bake 15 minutes or until heated through and cheese is melted.
