Avocado And Tarragon Rillettes On Garlic Croutes Recipe

  1. Preheat the oven to 200C/410F/gas 7.
  2. Slice the baguette into thin vertical slices.
  3. Lay on a baking tray and brush on a little extra virgin olive oil over each one.
  4. Sprinkle with freshly grnd rock salt and bake in the oven for 10-12 min, till the croutes are golden and crisp.
  5. Peel and chop the avocado into a rough but small dice size.
  6. Take a large mixing bowl and mix all of the remaining ingredients together.
  7. With a fork, place a little of the avocado rillette on each of the croutes.
  8. To garnish, place a little fromage frais on top with a sprinkle of paprika.
  9. NOTES : makes 12 pcs
