Chicken, Avocado & Grapefruit Salad with Orange Dressing

  1. Mix mayonnaise, orange zest and juice until well blended; cover and refrigerate at least 1 hour.
  2. Cut each avocado into eight slices just before using; dip in reserved grapefruit juice to help preserve the color.
  3. For each serving: Slice 1 chicken breast.
  4. Cover serving plate with 2 lettuce leaves; top with chicken, 1/2 cup of the grapefruit and 2 avocado slices.
  5. Drizzle with 2 Tbsp.
  6. of the mayo mixture.
