Chicken, Avocado & Grapefruit Salad with Orange Dressing
- 1-1/4 qt. KRAFT MAYO Fat Free Mayonnaise Dressing
- 1/3 cup grated orange zest, blanched, cooled King Sooper's 1 lb For $0.99 thru 02/09
- 2/3 cup fresh orange juice
- 11-1/4 each avocados
- 1-1/4 gal. refrigerated-pack ruby red grapefruit segments, drained, juice reserved Safeway 10 ct For $10.00 thru 02/09
- 45 each grilled boneless skinless chicken breasts (3 oz. each)
- 90 each romaine lettuce leaves
- Mix mayonnaise, orange zest and juice until well blended; cover and refrigerate at least 1 hour.
- Cut each avocado into eight slices just before using; dip in reserved grapefruit juice to help preserve the color.
- For each serving: Slice 1 chicken breast.
- Cover serving plate with 2 lettuce leaves; top with chicken, 1/2 cup of the grapefruit and 2 avocado slices.
- Drizzle with 2 Tbsp.
