Veggie Burgers
- 1 tablespoon oil (divided)
- 14 cup onion, chopped
- 14 cup green pepper, chopped
- 14 cup carrot, chopped
- 14 cup frozen chopped broccoli (drained and finely chopped)
- 23 cup white kidney beans or 23 cup great northern bean, drained
- 1 egg, lightly beaten
- 13 cup seasoned dry bread crumb
- Saute vegetables in half of oil until soft- about 1 minute.
- Cool slightly.
- Mash beans and mix with egg and bread crumbs.
- Add veggies.
- Chill for 20-30 minutes.
- Form patties.
- Fry in remaining oil.
- Serve on buns and with your favorite toppings.
- Makes 3-4 patties.
