Veggie Burgers

  1. Saute vegetables in half of oil until soft- about 1 minute.
  2. Cool slightly.
  3. Mash beans and mix with egg and bread crumbs.
  4. Add veggies.
  5. Chill for 20-30 minutes.
  6. Form patties.
  7. Fry in remaining oil.
  8. Serve on buns and with your favorite toppings.
  9. Makes 3-4 patties.
