Oven-Roasted Root Vegetables & Apples

  1. Heat oven to 425 degrees F.
  2. Cut carrots lengthwise, then crosswise in half; place in large bowl.
  3. Add parsnips.
  4. Mix dressing, zest and red pepper until blended.
  5. Drizzle over vegetables; toss to evenly coat.
  6. Spread onto rimmed baking sheet sprayed with cooking spray.
  7. Bake 20 min.
  8. Add apples and cheese to baking sheet; stir to combine.
  9. Bake 15 to 20 min.
  10. or until vegetables and apples are tender.
