Chocolate Cheesecake Squares
- 1 cup (250 mL) graham wafer crumbs
- 2 tbsp (25 mL) granulated sugar
- 2 tbsp (25 mL) vegetable oil
- 1/2 tsp (2 mL) ground cinnamon
- 1 package (10.25 oz/290 g) silken soft tofu
- 2 eggs
- 2/3 cup (175 mL) granulated sugar
- 1/3 cup (75 mL) unsweetened cocoa powder
- 2 tsp (10 mL) vanilla
- 1/2 tsp (2 mL) salt
- Sliced strawberries (optional)
- 8-inch (2 L) square cake pan, lined with parchment paper
- Preheat oven to 350F (180C).
- In a small bowl, stir together graham wafer crumbs, sugar, oil and cinnamon.
- Press onto bottom of prepared pan.
- Using a sieve, drain tofu.
- In a medium bowl, using an electric mixer, beat together drained tofu, eggs, sugar, cocoa, vanilla and salt until smooth.
- Pour into pan.
- Bake in preheated oven for 35 to 40 minutes, or until firm.
- Let cool on a wire rack.
- Cut into 16 squares and garnish each piece with strawberry slice (if using).
