Favorite Lemon Cutout Cookies

  1. In a large mixer bowl, combine all cookie ingredients.
  2. Beat at low speed, scraping bowl often, until well mixed, 1 to 2 minutes. If desired, divide dough and color with food coloring (mix in well).
  3. Wrap dough in waxed paper or plastic wrap.
  4. Refrigerate until firm, 2 to 3 hours.
  5. Preheat oven to 400u0b0.
  6. Roll out dough, 1/3 at a time, on a well-floured surface to 1/4-inch thickness. Cut out with cookie cutters (hearts for Valentine's Day, animal shapes for any day, Christmas shapes, etc.).
  7. Place 1 inch apart on ungreased cookie sheets.
  8. If desired, sprinkle colored sugars over tops or bake and decorate later with frosting.
  9. Bake for 6 to 10 minutes, or until edges are lightly browned.
  10. Remove immediately; cool completely.
