Favorite Lemon Cutout Cookies
- 2 1/2 c. all-purpose flour
- 1 c. granulated sugar
- 1 c. softened butter
- 1 egg
- 1 tsp. baking powder
- 1 Tbsp. lemon juice
- 2 to 3 Tbsp. lemon extract
- 2 Tbsp. vanilla
- In a large mixer bowl, combine all cookie ingredients.
- Beat at low speed, scraping bowl often, until well mixed, 1 to 2 minutes. If desired, divide dough and color with food coloring (mix in well).
- Wrap dough in waxed paper or plastic wrap.
- Refrigerate until firm, 2 to 3 hours.
- Preheat oven to 400u0b0.
- Roll out dough, 1/3 at a time, on a well-floured surface to 1/4-inch thickness. Cut out with cookie cutters (hearts for Valentine's Day, animal shapes for any day, Christmas shapes, etc.).
- Place 1 inch apart on ungreased cookie sheets.
- If desired, sprinkle colored sugars over tops or bake and decorate later with frosting.
- Bake for 6 to 10 minutes, or until edges are lightly browned.
- Remove immediately; cool completely.
