Bread Alone's Orange Blossom Muffins Recipe
- 1 c. lowfat milk
- 1/2 c. lowfat sour cream
- 2 x Large eggs
- 3 1/2 c. all-purpose flour
- 1 c. sugar
- 1 1/2 Tbsp. baking pwdr
- 1/2 tsp salt
- 1 1/2 stk cool butter cut in pats
- 1/2 c. orange juice zest of one orange
- 2 Tbsp. orange-flavored liqueur light brown sugar about 1/4 c.
- Preaheat oven to 350.
- Butter standard muffin tins.
- Whisk the lowfat milk, lowfat sour cream and Large eggs together in a mixing bowl and set aside.
- In the bowl of an electric mixer fitted with a paddle or possibly using a wooden spoon in a mixing bowl, combine the dry ingredients.
- Cut in the butter till the mix resembles cornmeal.
- Pour the lowfat sour cream mix into the butter and flour mix and mix till the dough comes together.
- Don't over mix.
- Gently fold the orange juice, zest and orange liqueur into the batter.
- Using an ice cream scoop, fill the muffin c. 3/4 full.
- Sprinkle the tops with a little brown sugar, about 1/2 to 3/4 tsp.
- per muffin.
- Bake in the center of the oven for about 25 min.
- Immediately turn muffins out of the tins onto a cooling rack.
