Sig's Mash with Caramelised Onions
- 6 medium to large potatoes
- 2 tbsp butter
- 2 tbsp milk
- 1 pinch ground nutmeg
- 1/2 tsp Knorr aromat or other instant stock powder or granule
- 50 ml water
- 3 large white onions
- 2 large shallots
- 2 small brown onions
- 5 spring onions
- 3/4 tbsp sugar
- 1 tbsp vegetable oil
- 1 pinch salt or salt substitute (to taste)
- Peel and finely slice all the onions, add the oil into a pan, add the onions and soften them without letting them burn .
- Add the sugar, water and aromat .
- Stir well and cook the onions on a medium heat until caramelised.
- This will take some time , do not let them burn, they should be golden brown with a few crisp bits only.
- Peel and boil your potatoes .
- Mash them with the milk , butter and season with salt or salt substitute and the nutmeg.
- Set aside a small amount of onions for garnish .
- Add the rest of the caramelised onions to the mashed potatoes , stir in well.
- Serve as a side with a main meal or on its own with vegetables or fried the next day when all the flavours have infused.
