Three-Cheese Sweet Potato Pancakes
- - sweet potatoes, peeled, shredded
- to taste salt and pepper
- 32 slices bacon, crisply cooked, crumbled Rite Aid 2 For $7.00 thru 02/06
- 1 qt. saltine crackers, coarsely crushed
- 16 each eggs
- 2 cups onions, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups roasted red peppers, finely chopped
- 1/2 cup flour
- 1 qt. shredded fontina cheese
- 2 cups Kraft Shredded Asiago
- 2 cups Kraft Shredded Parmesan
- 1 cup oil
- Mix all ingredients except oil.
- Shape into 48 patties (or six patties for trial recipe), using 1/2 cup (125 mL) of the potato mixture for each patty.
- Heat oil in large nonstick skillet on medium-high heat.
- Add patties, in batches; cook 2 to 3 min.
- on each side or until golden brown on both sides.
- Carefully transfer to sheet pans.
- Bake in 350 degrees F-convection oven 2 to 3 min.
- or until internal temperature reaches 140 degrees F.
