Stuffed Flounder Fillets
- 6 flounder or sole fillets
- 2/3 c. finely chopped celery
- 1 medium onion, finely chopped
- 2 Tbsp. butter
- 1 lb. shrimp, cooked and chopped
- 1/2 c. crab meat
- 1/2 c. seasoned bread crumbs
- 1 Tbsp. chopped parsley
- 1 egg, slightly beaten
- bread crumbs, buttered
- grated Parmesan cheese
- Wash fillets; drain well on paper towels.
- Saute celery and onion in butter.
- Add shrimp, crab meat, bread crumbs, parsley and egg; mix.
- Spread on fish fillets.
- Roll up; place in lightly greased baking dish.
- Pour white wine sauce over fillets.
- Top with bread crumbs, Parmesan cheese and additional chopped parsley. Refrigerate overnight at this point, if desired.
- Bake at 350u0b0 for 30 minutes.
- Serves 6.
