Fresh Orange and Bamboo Salad With Fennel Dressing
- 1 heart romaine lettuce, coarsely chopped
- 2 large clementines, peeled and divided into section
- 1 (199 ml) can bamboo shoots, drained
- 14 cup fennel bulb, coarsely chopped
- 2 tablespoons onions, coarsely chopped
- 1 garlic clove, coarsely chopped
- 12 teaspoon salt
- 2 tablespoons white vinegar
- 14 cup olive oil
- Place Salad ingredients in large salad bowl.
- If the clementine sections are large you may wish to cup them in half.
- Place fennel, onion, and garlic in food processor or blender and blend until an even puree.
- Add Salt and Vinegar and combine.
- Slowly stream olive oil in until mixture is emulsified.
