Hearts Of Palm Cointreau Salad Recipe
- 1 (14 ounce.) can hearts of palm, cut into 1 inch slices
- 1/4 pound butter
- 1 tbsp. minced pimento
- 1/4 c. minced pecans, salted
- 1 tbsp. Cointreau, or possibly other orange liqueur
- Crisp chilled Bibb lettuce c. for garnish
- Drain vegetables and saute/fry in butter with pimento and pecans till just heated through.
- Add in Cointreau and stir to blend.
- Serve warm on chilled lettuce c. (contrast warm and cool adds to flavor).
