Pan-Fried Fish with Lemon and Zucchini
- 1/4 cup Kraft Extra Virgin Olive Oil Greek Feta Dressing, divided
- 3 zucchini (1 lb./450 g), chopped
- 3 cloves garlic, minced
- 4 tilapia fillets (1 lb./450 g) Walmart Supercenter 1 pkg For $10.98 thru 02/14
- 2 green onions, thinly sliced
- 2-2/3 cups hot cooked long-grain brown rice
- 1 lemon, cut into 8 wedges
- Heat 2 Tbsp.
- dressing in large skillet on medium heat.
- Add zucchini; cook and stir 4 min.
- or until crisp-tender.
- Add garlic; cook and stir 1 min.
- Transfer to bowl; cover to keep warm.
- Heat remaining dressing in same skillet.
- Add fish; cook 2 to 3 min.
- on each side or until fish flakes easily with fork.
- Transfer fish to platter.
- Return vegetables to skillet; cook and stir 1 min.
- or until heated through.
- Stir in onions; spoon over fish.
- Serve with rice and lemon wedges.
