Corn Casserole
- 2 lb. hamburger
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 1/2 c. sliced black olives
- 1 (15 oz.) can stewed tomatoes
- 1 (15 oz.) can tomato sauce
- 1 (17 oz.) can whole kernel corn, drained
- 1 Tbsp. chili powder
- 6 oz. crushed Fritos corn chips
- 1/2 lb. grated Cheddar cheese
- Brown hamburger
- in
- atarge skillet; drain off excess fat. Stir
- in
- the
- chopped
- onion; continue cooking over low heat for 10 minutes.
- Add chopped green pepper, sliced olives, stewed tomatoes,
- tomato sauce, drained corn and chili powder. Simmer over low
- heat
- for
- 20
- minutes.
- Place
- in a 9 x 13 x 2-inch baking dish.
- Stir in 3/4 of the crushed corn chips and 3/4 of the
- grated
- cheese.
- Sprinkle the remaining chips and cheese over the
- top.
- Bake,
- uncovered, in a 350u0b0 oven for 30 minutes.
