Mini Burgers with Bacon

  1. Chipotle Mayonnaise: Mix ingredients; cover.
  2. Refrigerate until ready to use.
  3. Angus Burgers: Shape meat into 192 small patties (or 48 patties for trial recipe), each weighing 1.5 oz.
  4. (45 g) and measuring about 2-1/2 inches in diameter.
  5. Sprinkle lightly with steak seasoning.
  6. Cook patties on preheated 350 degrees F flat-top grill 2 min.
  7. on each side or until medium doneness (160 degrees F), topping each of half of the burgers with 1 cheese piece for the last 30 sec.
  8. of the cooking time.
  9. For each serving: Place 2 plain burgers on bottom halves of 2 rolls.
  10. Top each with 1 cheeseburger, 3 bacon pieces and top of roll.
  11. Thread 1 gherkin onto each of 2 toothpicks; insert in tops of rolls.
  12. Place on serving plate.
  13. Garnish plate with 3 lettuce pieces and 1 tomato slice.
  14. Serve with 1 oz.
  15. (30 g) Chipotle Mayonnaise in a small ramekin.
