Vegetable Beef Stew
- 1 1/2 lb. stew meat
- 3 qt. water
- 2 1/2 Tbsp. salt
- 1/2 tsp. pepper
- 2 large onions, chopped
- 2 bay leaves, crushed
- 1/4 tsp. oregano
- 1/4 tsp. thyme
- 2 lb. potatoes, cubed
- 1 large pkg. frozen veggies
- 4 c. shredded cabbage
- 1 large can tomatoes
- 1 tsp. sugar
- Place beef in a large pot with 2 1/2 quarts water. Add 1 tablespoon salt, pepper and 1 chopped onion.
- Combine bay leaves, oregano and thyme; tie in a cheesecloth bag and drop into pot with meat.
- Cover and simmer 3 hours.
- Cut meat into bite size pieces and add to stock.
- Add potato chunks, cabbage, 1 chopped onion and 1 tablespoon salt.
- Simmer for 1 hour.
- Add 2 cups water, tomatoes, sugar, frozen veggies and 1/2 teaspoon salt.
- Cook for 1 hour longer.
- Yields 6 quarts.
