Bean Salad
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (11 ounce) can white shoepeg corn, drained
- 1 (15 ounce) can black-eyed peas, rinsed and drained
- 12 medium red onion, minced (or to taste)
- 1 red bell peppers or 1 yellow bell peppers or 1 orange bell pepper, diced
- 14 cup red wine vinegar or 14 cup white wine vinegar
- 14 teaspoon stevia (original 1/4 cup sugar)
- 14 cup olive oil (original 1/2 cup olive oil)
- Mix all the beans together.
- Add onions and bell peppers.
- For the dressing, dissolve Stevia in vinegar.
- Add oil.
- Mix well.
- Pour over beans.
- Mix and chill for 1-3 hours.
- Overnight works even better.
