Cheese Cake(Crostata)
- 3 lb. Ricotta cheese
- 2 c. sugar
- 8 egg yolks
- 1/2 c. flour
- 1 lemon rind, grated
- 1 tsp. lemon extract
- 8 egg whites
- 1/2 c. heavy cream, whipped
- 1 c. graham cracker crumbs
- Preheat
- oven
- to
- 425u0b0.
- Drain Ricotta cheese and beat until smooth.
- Slowly
- add
- 1
- 1/2
- cups sugar and egg yolks, beating after
- each
- addition.
- Beat in flour, lemon rind and lemon extract.
- Beat
- egg
- whites
- with remaining sugar until stiff. Blend
- with
- whipped
- cream and fold in Ricotta cheese mixture. Butter
- heavily a 12-inch spring-form pan and sprinkle
- with graham
- cracker crumbs.
- Pour filling into prepared pan
- and
- bake for 10 minutes.
- Lower temperature to 350u0b0 and bake
- 1
- hour. Turn off heat and allow to cool in oven.
- Keep refrigerated.
