Cheese Cake(Crostata)

  1. Preheat
  2. oven
  3. to
  4. 425u0b0.
  5. Drain Ricotta cheese and beat until smooth.
  6. Slowly
  7. add
  8. 1
  9. 1/2
  10. cups sugar and egg yolks, beating after
  11. each
  12. addition.
  13. Beat in flour, lemon rind and lemon extract.
  14. Beat
  15. egg
  16. whites
  17. with remaining sugar until stiff. Blend
  18. with
  19. whipped
  20. cream and fold in Ricotta cheese mixture. Butter
  21. heavily a 12-inch spring-form pan and sprinkle
  22. with graham
  23. cracker crumbs.
  24. Pour filling into prepared pan
  25. and
  26. bake for 10 minutes.
  27. Lower temperature to 350u0b0 and bake
  28. 1
  29. hour. Turn off heat and allow to cool in oven.
  30. Keep refrigerated.
