Hearty Vegetable Beef Barley Soup Recipe

  1. In Dutch oven brown meat.
  2. Add in onion and garlic; cook till onion is tender.
  3. Drain.
  4. Stir in remaining ingredients except for frzn vegetables.
  5. Cover and bring to boil.
  6. Reduce heat, simmer for 1 hour, stirring occasionally.
  7. Add in frzn vegetables cook additional 15 min.
  8. More water can be added if soup gets too thick.
  9. You can also use more than 1/2 lb.
  10. of meat.
  11. This soup is great with some corn muffins.
