Breakfast Encheesadas
- 4 eggs
- garlic salt and ground black pepper to taste
- 12 corn tortillas (6 inch)
- refried black beans
- 1/4 cup chopped peppers (jalapeno, serrano or bell) Target 1 pkg For $2.99 thru 02/06
- 1 pkg. (8 oz.) VELVEETA Mild Cheddar Flavor Shredded Pasteurized Process Cheddar Cheese Food
- 1/2 cup chopped onion
- 1/2 cup chopped tomato King Sooper's 1 lb For $0.99 thru 02/09
- sour cream and cilantro (to garnish)
- Break eggs into shallow bowl; beat lightly.
- Mix in garlic salt and black pepper.
- Dip tortillas into egg mixture.
- Add, 1 at a time, to hot skillet sprayed with no stick cooking spray; cook until golden brown on both sides.
- Remove from skillet.
- Spread 1/2 of the tortillas with beans; sprinkle evenly with peppers, VELVEETA, onion and tomato.
- Cover with remaining tortillas (to make sandwiches).
- Garnish with sour cream and cilantro.
