Flank Steak with Red-Onion Marmalade
- 3 tbsp. margarine or butter
- 2 medium red onions
- 3 tbsp. sugar
- 3 tbsp. distilled white vinegar
- 1 flank steak
- In nonstick 12-inch skillet, melt 2 tablespoons margarine or butter over medium heat.
- Add onions and cook until soft, about 15 minutes, stirring occasionally.
- Stir in sugar, vinegar, and 1/2 teaspoon salt.
- Reduce heat to low; simmer 5 minutes.
- Spoon this red-onion marmalade into small bowl; keep warm.
- Wash skillet and wipe dry.
- Sprinkle steak with 1/2 teaspoon salt and 1/4 teaspoon coarsely ground black pepper.
- In same skillet, melt remaining 1 tablespoon margarine or butter over medium-high heat.
- Add steak and cook 12 to 15 minutes for medium-rare or until of desired doneness, turning once.
- Transfer steak to cutting board.
- Return red-onion marmalade to skillet; heat through.
- Serve steak, sliced, with red-onion marmalade.
