Flank Steak with Red-Onion Marmalade

  1. In nonstick 12-inch skillet, melt 2 tablespoons margarine or butter over medium heat.
  2. Add onions and cook until soft, about 15 minutes, stirring occasionally.
  3. Stir in sugar, vinegar, and 1/2 teaspoon salt.
  4. Reduce heat to low; simmer 5 minutes.
  5. Spoon this red-onion marmalade into small bowl; keep warm.
  6. Wash skillet and wipe dry.
  7. Sprinkle steak with 1/2 teaspoon salt and 1/4 teaspoon coarsely ground black pepper.
  8. In same skillet, melt remaining 1 tablespoon margarine or butter over medium-high heat.
  9. Add steak and cook 12 to 15 minutes for medium-rare or until of desired doneness, turning once.
  10. Transfer steak to cutting board.
  11. Return red-onion marmalade to skillet; heat through.
  12. Serve steak, sliced, with red-onion marmalade.
