Island Ketchup
- 1 cup ketchup
- 14 cup applesauce
- 1 onion, minced
- 1 green bell pepper, minced
- 14 cup ponzu sauce
- 14 cup maple syrup
- 14 cup water
- 18 cup hot pepper sauce (to taste, such as Franks)
- In a saucepan, stir all ingredients together and cook over low heat until onions and peppers are softened to the point that they are fully incorporated, about 1 hour.
- If needed to maintain consistency, add additional water.
- Stir in hot sauce to taste.
- Let cool to room temperature, then store covered in the refrigerator for up to a month.
