My Oven 'Fried' Potatoes
- 1 small red potatoes
- coconut oil
- salt
- Preheat oven to 400 degrees F.
- Peel the potato (or leave whole if the skin is smooth and unblemished).
- Cut the potato into julienne slices about 3/8 inch (1 cm) thick.
- Rub a little oil into the palms of your hands.
- Take a few slices and lightly coat them with oil from your hands.
- Repeat until all slices are coated with oil.
- Arrange the slices on a baking sheet.
- Bake on top rack of oven for about 25 minutes or til lightly browned on top.
- Remove from oven, arrange on a plate.
- Salt and serve.
- Enjoy!
