My Oven 'Fried' Potatoes

  1. Preheat oven to 400 degrees F.
  2. Peel the potato (or leave whole if the skin is smooth and unblemished).
  3. Cut the potato into julienne slices about 3/8 inch (1 cm) thick.
  4. Rub a little oil into the palms of your hands.
  5. Take a few slices and lightly coat them with oil from your hands.
  6. Repeat until all slices are coated with oil.
  7. Arrange the slices on a baking sheet.
  8. Bake on top rack of oven for about 25 minutes or til lightly browned on top.
  9. Remove from oven, arrange on a plate.
  10. Salt and serve.
  11. Enjoy!
