Fruit Curry
- spring roll wrappers
- 3 -4 apples
- 2 bananas, sliced
- 1 mango, sliced
- 2 teaspoons curry powder
- 12 teaspoon garam masala
- 12 teaspoon cinnamon
- 12 lb firm tofu
- 1 inch fresh ginger
- 2 teaspoons oil
- Heat the oil and saute the ginger until it begins to sizzle.
- Add the tofu-saute for about 3-5 minutes.
- Add the apples and cook until hot.
- Add mango and sliced bananas.
- Cook until heated through.
- Mix in spices and cook for another 2 minutes.
- Prepare spring roll papers by soaking in water until soft.
- Scoop some of the fruit mixure onto it and roll it up.
