Fruit Curry

  1. Heat the oil and saute the ginger until it begins to sizzle.
  2. Add the tofu-saute for about 3-5 minutes.
  3. Add the apples and cook until hot.
  4. Add mango and sliced bananas.
  5. Cook until heated through.
  6. Mix in spices and cook for another 2 minutes.
  7. Prepare spring roll papers by soaking in water until soft.
  8. Scoop some of the fruit mixure onto it and roll it up.
