Spicy Shrimp With Artichokes
- 4 Tbsp. butter
- 1 (9 oz.) pkg. frozen artichokes, thawed
- 1 1/2 lb. medium shrimp, shelled and deveined
- 2 3/4 c. water
- 1/3 c. dry white wine
- 1 tsp. powdered chicken stock base
- 2 (4.5 oz.) pkg. rice and sauce, chicken flavor
- 1/2 c. chopped red bell pepper
- 3 scallions, chopped
- 1 (10 oz.) pkg. frozen French-style green beans, thawed
- In a 12-inch skillet, melt butter over medium heat.
- Add artichokes and cook, stirring occasionally, 2 minutes.
- Add shrimp, increase heat to high and cook, stirring 2 to 3 minutes or until shrimp are pink and loosely curled.
- Add water, wine, chicken stock base and rice mixes.
- Heat to boiling over high heat; boil 1 minute.
- Reduce heat to low and simmer, uncovered, 5 minutes.
- Stir in red peppers, scallions and green beans.
- Cook over medium-low heat 5 to 8 minutes longer, or until rice is tender and beans are cooked through.
- Serve immediately.
