Spicy Shrimp With Artichokes

  1. In a 12-inch skillet, melt butter over medium heat.
  2. Add artichokes and cook, stirring occasionally, 2 minutes.
  3. Add shrimp, increase heat to high and cook, stirring 2 to 3 minutes or until shrimp are pink and loosely curled.
  4. Add water, wine, chicken stock base and rice mixes.
  5. Heat to boiling over high heat; boil 1 minute.
  6. Reduce heat to low and simmer, uncovered, 5 minutes.
  7. Stir in red peppers, scallions and green beans.
  8. Cook over medium-low heat 5 to 8 minutes longer, or until rice is tender and beans are cooked through.
  9. Serve immediately.
