Minestrone Primavera
- 1 12 quarts chicken broth, divided
- 1 (15 ounce) canrinsed and drained garbanzo beans
- 2 cups coarsely shredded cabbage
- 2 cups chopped tomatoes
- 1 cup cut green beans
- 6 small new potatoes, quartered
- 34 cup chopped onion
- 34 cup thinly sliced leek
- 34 cup sliced carrot
- 1 teaspoon dried Italian seasoning
- 34 cup broccoli floret
- 34 cup peas
- 4 ounces macaroni, cooked
- 12 cup finely chopped parsley
- salt and pepper
- grated parmesan cheese (to garnish)
- Combine all ingredients except broccoli, peas, macaroni, parsley, salt, pepper and cheese in slow cooker; cover and cook on low 6-8 hours, adding broccoli peas and macaroni during last 30 minutes.
- Stir in parsley; season to taste with salt and pepper.
- Serve topped with cheese.
