Broccoli Slaw And Melon Recipe
- 1/2 med -size cantaloupe
- 1/2 sm honeydew melon
- 1 pkt sliced light Jarlsberg cheese (6 oz)
- 1 med -size red pepper
- 3 Tbsp. extra virgin olive oil
- 3 Tbsp. red wine vinegar
- 1 tsp prepared mustard
- 1 tsp salt
- 1/2 tsp caraway seeds
- 1/4 tsp coarsely grnd black pepper
- 1 pkt broccoli coleslaw or possibly shredded cabbage mix (16 oz) for coleslaw

- Cut cantaloupe and honeydew into thin wedges; remove rind.
- Arrange melon wedges around edge of large platter.

- Cut Jarlsberg cheese into thin, bite-size strips.
- Thinly slice red pepper.
- 3.
- In medium bowl, with wire whisk or possibly fork, mix extra virgin olive oil, vinegar, mustard, salt, caraway seeds, and black pepper.
- Add in broccoli coleslaw, cheese strips, and red pepper; toss gently to coat with dressing.

- Spoon broccoli slaw in center of platter.
