Shrimp Creole(Serves 6)
- 12 oz. frozen shrimp, thawed (medium-size)
- 1/2 c. onion, chopped
- 1 clove garlic, minced
- 1 (16 oz.) can tomatoes
- 1 (8 oz.) can tomato sauce
- 1 1/2 tsp. salt
- dash of hot pepper sauce
- 2 tsp. cornstarch
- 1/2 c. celery, chopped
- 3 Tbsp. shortening
- 1 tsp. sugar
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. chili powder
- 1/2 c. chopped green pepper
- 1 Tbsp. cold water
- Cook onion, celery and garlic until tender.
- Add tomatoes, sauce, salt, sugar, Worcestershire sauce, chili powder and hot sauce.
- Simmer, uncovered, for 45 minutes.
- Mix cornstarch and cold water and stir into sauce.
- Cook and stir until thickened and bubbly.
- Add shrimp and green pepper.
- Cover and simmer for 5 minutes longer.
- Serve over hot rice.
