Caramel Apple Cake

  1. Combine walnuts, coconut and brown sugar; set aside.
  2. In a mixing bowl, combine the next 6 ingredients.
  3. In a small bowl, combine eggs, milk, water and apples; add to flour mixture.
  4. Mix well.
  5. Pour into a greased 13 x 9 x 2 inch baking pan.
  6. Sprinkle with nut mixture.
  7. Bake at 325 for 45-50 minutes or until a toothpick inserted near the center comes out clean.
  8. Meanwhile, in a heavy saucepan, combine the topping ingredients; cook over medium heat, stirring constantly, until the sugar is dissolved and the mixture has thickened slightly, about 8 minutes.
  9. Pork holes with a fork in top of the hot cake; immediately spoon topping over cake.
  10. Cool completely on a wire rack.
